Whenever I add coconut milk I add spices as well as Thai coconut pumpkin soup is amazing. I tend to add a little nut cream or sesame milk to my pumpkin soup to give it added creaminess once I serve it. I just saw a wonderful recipe for pumpkin peanut soup. It looked amazing and the peanuts (when finely ground to paste) would give it a lovely creaminess. There is always that gorgeous pumpkin soup that they make in Africa with peanuts as well.
