    1. Hello Rashmi,
      Use instant dry yeast as it is very dependable. Gloripan is a good brand. I use "Four Seasons" as this is the only brand available here. Hope this helps.

  8. In your experience, which method works best to make a tall 100% wwf loaf bread- autolyse/tangzong/normal 10 minute kneading?
    I am really confused, so could you please help?

    1. Hello Jyotsna, Baking is all about practice, failures and gaining experience from the failures. I have bakes very tall whole wheat loaves from normal kneading. Autolyse method gives a soft hydrated crumb. Tangzong also makes the crumb soft. A lot depends of the kind of flour you use. try using fine variety of WWF. When I use sharbati atta for my beads, my loaves come out tall.

      Absolutely, we can make sourdough starter at home from scratch. Infact last December I was a speaker in. Healthy Baking Conference and I spoke on sourdough baking.
      I shall post the recipe of the starter soon.
      There is a recipe of Beet and Carrot soup on my blog. I shall send you some recipes soon.
