Cardamom Tea Cake

Cardamom Cake has a delicate buttery crumb infused with the beautiful aroma of cardamoms. It is a lovely accompaniment to tea. It makes a great dessert when served with warm custard or ice cream




It has been raining incessantly since yesterday. Farmers in the hills are happy with the much awaited middle of the summer rains. Their potato crop will benefit as potatoes will plump up to a good size.



Baby Drongoes are growing fast in their nest on a pear tree. They crane their neck, looking and waiting for the parents to fetch them food.  There is a constant chirrup as mother arrives with food and babies fight over and jostle to grab their share first. 



The mother then perches atop a tall oak tree keeping a watch over her brood.



The timer chimes as the Cardamom Tea Cake turns golden and a beautiful cardamom infused buttery aroma fills up the air.




Cardamom Tea Cake is a simple cake with the ingredients readily available at home. Cardamom gives a beautiful flavour and aroma. A quick and simple cake that can be put together in no time.



We loved the cake.

Some slices were savoured with the evening tea and some were saved to accompany the warm custard as a dessert. A simple warm comforting dessert is much asked for and gratifying on a cold day. The family loved the slices of cardamom cake with custard.



The Cake has a soft and flavouful crumb. The cardamom flavour is beautiful.

 

Cardamom Tea Cake

Ingredients

  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 1 stick ( ½ cup) butter
  • ¾ cup unrefined cane sugar (1-2 tablespoons more if  you prefer a sweeter cake)
  • 1 free-range egg
  • 10-20 medium-size green cardamoms
  • ¾ cup warm milk

Instructions

  1. Preheat oven to 180 degrees C. Grease the sides and line the bottom of one 8x4 inches loaf pan or, one 8 inch round cake pan.
  2. Grind the seeds of the cardamom to a fine powder.
  3. Whisk together first three ingredients in a large bowl.
  4. Cream butter and sugar until pale and fluffy.
  5. Add egg. Beat well.
  6. Add flour mix and cardamom powder. Add warm milk. Stir to get a creamy batter. Do not over mix.
  7. Pour batter into the prepared pan.
  8. Bake for 25-30 minutes or until the top turns a beautiful golden and a toothpick inserted in the center comes out clean.
  9. Remove from the oven after 5 minutes. Remove from the pan and cool on the rack. Slice when completely cold.  (Slice next day for the better flavor and softer crumb)
