WHOLE WHEAT AND EGGLESS BANANA LOAF

Whenever we have a bunch of bananas at home, I am always tempted to bake a cake or bread using bananas. Bananas lend a beautiful aroma to the baked products and make the breads and cakes super soft. In today’s post, I am sharing the recipe of my favourite Banana Loaf.


Ingredients
1 ½ cups whole wheat flour (atta)
4 ripe bananas mashed
¾ cup powdered sugar
½ cup curd
1/3 cup olive oil
1 teaspoon baking soda
1 pinch salt
1 teaspoon vanilla essence



Method
In a bowl, mix together mashed bananas, powdered sugar, salt, olive oil, vanilla essence and curd. In another bowl, sieve together whole wheat flour and baking soda. Now add this to the wet ingredients and mix till all the ingredients are just well combined. Pour the batter in a greased and lined loaf tin. Bake in a pre-heated oven at 180 degrees for about an hour. The loaf should turn golden and the skewer should come out clean when it is done. Let it rest in the oven for 5 minutes. Remove from the oven and take it out of the loaf tin and keep it in the wire rack to cool.


Banana loaf has curd and bananas. It is a moist loaf. It spoils if kept for more than two days. It is best to consume in two days. Otherwise keep the slices in the refrigerator.

  1. Namita, I pore over your posts, drool & draw a great deal of vicarious pleasure. Finally I baked the semolina banana eggless fat-free cake in shifts. Gathered the ingredients at breakfast time, not enough curds so set a big bowl & went out for the society garden committe meeting. Returned & seved lunch, mixed the semolina & yoghurt at 2.30 pm, cleared the counter & fell asleep, we were in a submarine yesterday & went to bed v late. Instead of one hr I stirred in the rest of the ingredients after th-r-ee hrs, beat that? The cake baked to perfection, in spite of straying from instructions, the sooji grains are succulent; the bananas were sweet so I could have done less sugar, next time. Love you, Namita.   4. Hello Binu, so excited to know about the bake sale. How did it go? Great idea to have added banana chips. Of all the banana bread, i loved the yeasted banana bread I baked some time ago. It comes out really soft.
